What is Authentic Neapolitan Pizza?
VPN Americas is the local branch of the Associazione Verace Pizza Napoletana, an international non-profit organization founded in the mid 1990’s by a group of Neapolitan pizzaiolis (pizza makers) seeking to cultivate the culinary art of making Neapolitan pizza. Strict pizza-making rules are proposed by this organization and Ah’ Pizz is one of only 60 pizzerias in the United States that is VPN-certified.
Brought to life by wood fire and stone, authentic Neapolitan pizza is characterized by dough made only with wheat flour, natural Neapolitan yeast, sea salt and water. The dough must be kneaded and formed by hand and may be no more than
3 mm (1/8 in.) thick. The pizza must be baked for less than 90 seconds in a 485 °C (905 °F) stone oven with an oak-wood fire.
According to the VPN, Neapolitan pizza must include: San Marzano tomatoes grown on the volcanic soil of Mount Visuvio, extra virgin olive oil, and fresh mozzarella Fior di Latte (made from cow’s milk) or mozzarella di bufala (made from the milk of Italian water buffalo). All mozzarella Fior di Latte is handmade on premise at Ah’ Pizz fresh daily.
